I like food

I must have forgot to take pictures of most our meals this week. Here are a few...

Elinor is obsessed with pineapples right now or "apple pies" like she calls them. She can say pineapples, I'm not sure why she says apple pies. I froze a bunch of pineapples we had, blended them with some almond milk and a date (I was out of agave or I would've used that instead). It tasted like an orange julius but with pineapples.
red peppers and broccoli stir fry. For the sauce we used dijon mustard, garlic and onion powder, ginger, vegan worcestershire sauce, liquid aminos and nutritional yeast. It was good, really beefy tasting.
For my classes on the weekends, we do 4 hours of training and then the last part is an actual power yoga class. In between our break I don't want to eat a huge lunch and then walk into a 90+ degree room and work out. I made these energy bars and brought some fruit instead. It was perfect. I will need to start making these or trying out another recipe every week. I used a recipe from Peas and Thank You: Simple Meatless Meals the Whole Family Will Love. Ingredients include oats, flaxseeds, whole wheat pastry flour, baking powder, salt, sugar, raisins, chocolate chips, maple syrup and peanut butter.

  1. Holy cow that last one sounds delicious! You're inspiring me to get off my butt and be more creative with my meals...because you did a stir fry without soy. Huge challenge for me but those are great ideas, thanks for sharing.
