I like food

Finally found them at Wegmans! Gardein breakfast sandwiches. They are pretty good. I still really like when we make our own but on this snowy morning they were perfect.
 Halfway into my meal and I remembered to take a picture. Gardein beef tips with broccoli and rice. I've never seen Elinor eat as much as she did this night. sauce for beef and broccoli was water, tamari sauce, hoisin sauce, chili paste and corn starch. Dave just threw all of it together 
 Spicy Buffalo Cauliflower. With all the Super Bowl talk, I kept hearing about all kinds of party/snack food that I was craving. 
 We also made Deviled Avocado with Chickpea Filling. These guys were so good! We added black salt which made the chickpea filling more eggy tasting but it was a little too much salt. Next time I will either half the salts or just use black salt.
 Again, still craving party food. I made Zucchini Brownies. They are very moist and delicious! Dave and Elinor added peanut butter to theirs.
 Kale and Sweet Corn Salad. We used basically this recipe but added rice and left out a couple other things like onions. This is a great salad to just build on. But try the sweet tahini miso dressing with whatever you add to it because the dressing is the best.
 We had bought tortilla chips awhile ago but hadn't opened them since we kept forgetting salsa. Dave is a genius and remembered we had a can of fire roasted tomatoes. I added some onions, garlic, cumin, chili powder and a little bit of lime.
I went to a yoga class and then met up with a friend. When I got home dave had lettuce wraps waiting for me. I could eat these every day. We didn't have cucumber so he used zucchini. He also added rice, carrots and tofu wrapped in butter lettuce. 
The peanut sauce was 2 tbsp peanut butter, 1/2 tbsp chili paste, 1 tbsp duck sauce, 4 tsp liquid aminos, 2 1/2 tsp rice vinegar, few dashes garlic powder, pinch ginger, 2 drops sriracha and 2 tbsp almond milk.

  7. That spicy buffalo cauliflower looks awesome. I always liked breaded cauliflower, but this looks much tastier, and healthier too!

  8. The deviled avocado has my mouth watering! I love anything with an avocado and have never tried one like that! It looks delicious.
