and in the morning, I'm makin' vegan waffles

Sooo sometimes I crave the vegan nachos from Papacitos in Brooklyn but it's a little far. Last night we bought all the makings

and we made some again this afternoon. We used chips, Boca crumbles, refried black beans, Tofutti sour cream, onions, hot peppers, salsa and Daiya cheese.

When my mom came to visit she brought some things for our house including a waffle maker and cupcake maker(I will be trying this guy out tomorrow!) This morning I made vegan waffles. I have never tried them before and searched for awhile this morning for a recipe that didn't sound too weird. I'm really happy with the one I found. It has maple syrup in it so I ate one without anything on it and it was really good. I also want to try using this recipe and making funnel cake!

Before I got up to make waffles (at 7:30am!) we were woken up to the theme from Star Wars followed by Indiana Jones followed by Star Trek. Right outside our window is an open field where they have been setting up a stage for the fireworks festivities. They were checking the speakers and practicing from 7:30 to about 2. I know tomorrow I will be excited about not having to go anywhere but our bedroom window or porch but this morning I was not feeling it.

This afternoon I went to the dentist. I haven't been in like 10 yrs. It wasn't so bad! I will need to get my wisdom teeth out soon though.
