Tuesday afternoon I made some vegan enchiladas. My mom had got me a new vegan cookbook for Christmas so we have been slowly trying out new recipes. This is one of the first ones we tried and loved. We switch up the way we make every time too! Last time I think it was with black beans.
This time I used quinoa, chickpeas, onions, green chilies, whole wheat tortillas and daiya cheese. The enchilada sauce we got from whole foods and it is so good. I will have to get the name of it next time I go. Last time we had used the cheap kind from stop and shop and it wasn't as good.
We even controlled ourselves and ate one each yesterday so tonight we have leftovers! yum I can't wait
