raw berry pudding


Dave showed me a video to make raw berry pudding. We tried it out and it is amazing! Elinor is obsessed with smoothies but I think she likes this pudding even more.


You throw a frozen banana, some frozen berries, 1 avocado, 1 date and 1 little apple in a food processor (we used our vitamix) and blend. So fast and so delicious!

I've been cooking

Since I haven't been posting my "I like food" posts, I've had the same tabs open on my computer for so long. They are the same recipes I've been making usually once a week. I do this a lot because I know once I bookmark them, they will be lost in a sea of recipes forever. Unless! I blog about them and then can easily find them by searching. So really this post is for me...and I guess you can benefit from it too.

Curried Chicken Salad by Fitnessista with this one I used one pack of Gardein chicken strips to sub for real chicken. I actually had to keep reminding myself that it wasn't real meat as I was shredding it. I might have gagged a little. I also just used plain soy yogurt.

Tomorrow morning we are heading to the cape for Thanksgiving. I think I will make apple cider donuts for our drive!

quick pasta salad by my mother

Awhile ago my mom sent me a recipe for this super quick pasta salad. Well I never made it so since she has been here she made it for us one night. I tried snapping some pics as she quickly made it. You can add any veggies with it but this is how she made it...
Add any kind of cold pasta, olives and cannelloni beans
mix with green giant antioxidant blend (contains broccoli, carrots and red and yellow sweet pepper strips)
she then mixes balsamic vinegar, water, oil and italian seasoning to make this yummy dressing to pour onto the pasta mix
Then enjoy! 

It takes just the amount of time to make the pasta and heat up the green giant veggies. She made tons extra so I've been able to eat it for lunch or snacks throughout the week. If anyone tries this out let me know what changes you made and how it came out!

enchiladas

Tuesday afternoon I made some vegan enchiladas. My mom had got me a new vegan cookbook for Christmas so we have been slowly trying out new recipes. This is one of the first ones we tried and loved. We switch up the way we make every time too! Last time I think it was with black beans.

This time I used quinoa, chickpeas, onions, green chilies, whole wheat tortillas and daiya cheese. The enchilada sauce we got from whole foods and it is so good. I will have to get the name of it next time I go. Last time we had used the cheap kind from stop and shop and it wasn't as good.

We even controlled ourselves and ate one each yesterday so tonight we have leftovers! yum I can't wait
