I've been wanting chili so bad lately. We had gone grocery shopping and I still hadn't made anything I bought. Finally last night Elinor took a later than usual nap which lasted extra long so I started cooking. I made 4 bean chili which turned out super good. While the chili was cooking I was looking at my open tabs and remembered the chunky apple bread recipe I had wanted to make. I still have a ton of apples so I quickly started to make it. Elinor slept through all the cooking. I had to finally open her door and started putting her clean laundry away to get her up. She loved the chili and good thing because there is so much leftover. I decided not to give her any bread because there is a little too much sugar in it. I will probably break down when I'm eating a piece and she goes crazy because I'm not sharing. I should've cut both recipes in half. Too much for just 1 1/2 people. Anyone want a loaf of apple bread??

stuffed peppers
I will keep with my continuous talk of food for the week. We have made stuffed peppers before and I thought I blogged about them but I can't seem to find it. Every time we make them slightly different. This time was really simple and easy. Only thing about making stuffed peppers is they have to bake for at least an hour, unless I'm missing something. We don't have a ton of time between when we get home and a reasonable hour to eat dinner. I got off work a little early the other day and we had peppers so we went with what we had.
stuffed with quinoa, black beans and a little pepperjack daiya cheese with mozzarella daiya on top. I'm pretty sure last time we mixed in a little tomato sauce in and it was really good but this was still yummy. Oh and a salad on the side. I was so so so stuffed that night. I think the quinoa expanded in my stomach, hours after we ate I still couldn't move.

more food posts?
We had plans on Dave's birthday to go to the farm....then it continued to rain. Our back up plan was the Aquarium with Zac and his niece....then Dorie got sick.
So the morning of his birthday I snuck downstairs early and made him french toast and a smoothie. At one point he yelled down "it smells like eggs and bacon, what are you making?" I said just my oatmeal (which I make every morning). He said oh sounding bummed. When he came down I had everything ready. I forgot to take a pic but they looked just like the french toast from this post. He opened some presents then we both went to work.
After I got off work he picked me up and we went to dinner at Pulse. I talk about this place all the time and how we can't control ourselves when we go. I thought I was being reasonable getting the caesar salad and buffalo tofu bites but he ordered loaded fries (cashew cheese, tempeh bacon and sour cream) as an appetizer for us. After the fries I was already full. For dinner Dave got the country fried seitan and dessert (which I didn't get a pic of) was a dark chocolate mint silk pie. It was too minty for me but he liked it.
Apparently all I talk about it food. Sorry!
