i like food

I haven't talked about food on here in awhile. Except that Elinor eats all the time. Really I haven't been cooking very much. After work, Dave cooks dinner while I play and get Elinor ready for bed or even sometimes I let her play with her toys while I take a shower. I sometimes need a little alone time after dealing with the commute to work, work and the commute home.
We eat fast because by the time dinner is ready it is bedtime for the little one. We are still trying to figure out the best nightly routine but it's hard with getting home so close to bedtime.
Sunday I really wanted to make something. My plan was strawberry biscuits but we were missing one ingredient so I flipped through cookbooks to find anything. Surprise, I found a soft pretzel recipe in peas and thank you. Favorite cookbook ever. Not one recipe has failed me.
I really didn't think they were going to come out good at all. Whenever I use active yeast I just know it is going to not work. They came out AMAZING though! I didn't have coarse salt but sea salt was just fine.
I have to work on my twisting skills!

I like food

The best sandwich from clear conscience cafe (everything bagel/tofutti cream cheese/cucumber/sprouts)
 I tried to recreate it but it wasn't as good. I don't think I put enough cream cheese on
 kale and beef from grasshopper
sweet and sour chicken fingers from grasshopper
 lettuce wraps recipe from peas and thank you book
pasta and veggies

Also (since I talk about it nonstop!) there is now a peas and thank you app! I downloaded but haven't had time to really play around with it. There are recipes, shopping lists and definitions of a lot of ingredients she uses. I did glance through the recipes and I was surprised at how many are up. It will be easy to find a recipe at really fast on the way home to try out.

We are off to Richmond VA today for United Blood fest. It's weird that this time last year at the fest I was pregnant and didn't know it yet. Hmm that's why I was feeling so sick!

I like food

Pizza with mushrooms and tomatoes
spaghetti squash casserole  might have made this twice
salad with this vegan cheese on it
 I was really excited to try it but it tasted nothing like I remembered feta tasting. It tasted like tofu soaked in balsamic. Which is good but not like feta.

I like food

 spinach tofu omelette with hasbrowns
 energy oatmeal bars from the peas and thank you book
tofu nuggets from the peas and thank you book
quinoa spanish rice from peas and thank you and indian inspired chickpeas and seitan that Dave winged

As soon as we got the peas and thank you cookbook we started making things. We joked and said we are going to cook our way through the whole thing in a couple of months...but really we are.

Some of the names from the cookbook may be wrong but I have a baby napping on me so I'm not willing to wake her to check.

I like food

 Spike's 
 maple donuts with bacos
 tempeh bacon, sprouts, avocado, buffalo wing hummus
 nutella wrapped in croissants
 noodle salad with peanut mmmm sauce (I could drink the mmmm sauce!)
 dinner at dave's dads house
 pizza with daiya cheese, sundried tomatoes and onions from a little place by dave's moms house
"cheesy" kale chips before the oven ( I want to make the "cheese" and put it on crackers. it was super good)

I finally am ordering the peas and thank you book. I make so many of the recipes from her site and love them. Last night we didn't have much in the house but since her recipes use a lot of the same ingredients I was able to throw together the thai fried quinoa. I had leftover coconut milk from making the mmm sauce so searched that on her reci"peas" pages and found a couple of things to choose from. One including a PB cup shake!! Wish I could've had that for dinner.

and we made pizza quinoa casserole (recipe from peas and thank you)

we are starting to be able to cook more since little miss is happy to lay on her playmat. Most nights at least!

our thanksgiving

How was your Thanksgiving? Ours was very laid back and delicious! This is the first year in forever that we didn't travel to either Ohio or PA. Dave's Dad and Cindy were in town, so we got to spend the day with them, which was nice. We did miss the rest of our families but it was relaxing to wake up and lay in bed and watch the parade. Then lay on the couch and watch the parade some more. We threw together a breakfast of sausage muffins and pumpkin protein donuts

We ordered our meal from Whole Foods but we made green beans with toasted almonds to bring for our side. I steamed the green beans, toasted some almond slices and then cooked them with a little lemon juice, olive oil, salt and pepper. 

Justine did an amazing job decorating and preparing everything. She even made a cheese plate with vegan cheese for us! That is on top of making some of their sides like mashed potatoes vegan for us.

We had fun snuggling with Reid. He was a little sick and just wanted to be held. He is the best baby even when he isn't feeling well. 
The picture right before this one he is laying his head on Dave and his poor little eyes were red. Cindy managed to get him to smile for this one. 

I also made a vegan pumpkin pie that came out really good. I want to make another one soon. It was really simple with not many ingredients.
